Fibre is vitally important for our digestive system as it keeps everything running smoothly as well has for our immune system, hormonal health and energy levels! So, as you enjoy the crispy, golden goodness, know that you're not just treating your palate but also giving your body the love and care it deserves.
Ingredients:
- 2 medium courgettes, grated and excess moisture squeezed out
- 160g canned sweetcorn
- 25g parmesan cheese, grated
- 1 small onion, grated
- 1 clove garlic, minced
- 1 tbsp. dried parsley
- 1⁄2 tsp. dried basil
- 1⁄2 tsp. dried oregano
- 1 tsp. salt
- 1⁄2 tsp. freshly ground black pepper
- 1⁄4 tsp. paprika
- 2 eggs, beaten
- 120g oat flour (aka ground oats)
- 1 tsp. baking powder
Instructions:

Prepare the Courgettes: Grate the courgettes using the large holes on a grater. Transfer the grated courgettes onto a kitchen towel, wrap the towel around them, and squeeze out as much moisture as possible. Place the squeezed courgettes into a large bowl.

Mix the Ingredients: Add sweetcorn, parmesan, grated onion, minced garlic, dried parsley, dried basil, dried oregano, salt, black pepper, paprika, and beaten eggs to the bowl. Stir well to combine.

Add Oat Flour and Baking Powder: Blitz the oats in a blender/Nutri Bullet. Then add it and baking powder to the mixture. Stir until well combined. If the mixture is too wet, add a little more oat flour. The drier the courgette, the less flour you'll need to use. The mixture should be thick enough to hold its shape.

Shape the fritters: Shape the mixture into 12 even-sized patties.

Chill the patties: Place the patties onto a tray and put the tray into the freezer for around 5 to 8 minutes to firm the patties up a little.

Preheat the oven to 200°C. Bake for 8 minutes and then flip and cook for a further 8 minutes. Cook until the fritters are golden and cooked through.

Or cook in an Air Fryer: Preheat the Air Fryer to 180°C.

Cook the Fritters: Working in batches, place the patties in the air fryer basket in a single layer. Cook for 6 minutes, then flip over and continue cooking for a further 6-8 minutes, until the fritters are golden and cooked through. Continue cooking the fritters until all the batter has been used up.

Serve the courgette and sweetcorn fritters hot, optionally with a dipping sauce or salad on the side.
