Superfood Breakfast with Eggs

Ingredients:

  • 300g broccoli, divided into smaller parts and chopped into tiny pieces or processed into broccoli rice
  • 1 garlic clove, minced
  • 1⁄4 onion, finely chopped
  • 20g pumpkin seeds
  • 20g dried cranberries
  • 2 tbsp coconut oil, divided
  • 4 eggs
  • Spices:
    • 1⁄2 tsp ground turmeric
    • 1⁄2 tsp chili flakes
    • 1⁄2 tsp paprika
    • 1⁄2 tsp oregano
  • Salt and pepper, to taste
  • Lemon juice, to drizzle

Method:

  1. Divide the broccoli into smaller parts and chop them into tiny pieces or use a food processor to make broccoli rice.

  2. Heat 1 tablespoon of coconut oil in a large frying pan over medium-high heat. Add the minced garlic, chopped onion, and pumpkin seeds. Fry, stirring occasionally, for about 5 minutes or until browned.

  3. Add the dried cranberries and broccoli rice to the pan. Sprinkle in all the spices (ground turmeric, chili flakes, paprika, and oregano). Season with salt and pepper according to taste. Mix well and fry for another 5-7 minutes, stirring occasionally. If the mixture starts to stick to the pan, add a little water to prevent burning. Towards the end of cooking, drizzle with lemon juice and stir to incorporate.

  4. In a separate frying pan, heat the remaining 1 tablespoon of coconut oil over medium heat. Crack the eggs into the pan and fry them until the whites are set but the yolks are still runny, or to your desired level of doneness. Season the eggs with salt and pepper.

  5. Once the eggs are ready, serve them on top of the broccoli rice mixture.

  6. Garnish with additional salt, pepper, and a drizzle of lemon juice if desired.

  7. Serve hot and enjoy your delicious and nutritious broccoli rice with fried eggs and spiced pumpkin seeds!
